Eggless Christmas Cake recipe
Ingredients:
To soak dry fruits:
Orange Juice - 1/2 cup
Dates,
Raisins,
Cashew,
Almonds
Tuti frutti (home made recipe link below)
1/2 cup of any dry fruits of your choice.
For Caramel:
Sugar - 1 cup
Water - 1/2 cup
For cake:
Milk and Curd - 1/4 cup
Oil - less than 1/4 cup
Vanilla essence - 3 to 4 drops
Maida - 1 cup
Sugar - 1/2 cup
Cinnamon & Ginger powder - 1/2 tsp each
Cocoa Powder - 2 tsp
Baking powder & Baking Soda - 1/2 tsp each
Vinegar - 1/2 tsp
Method:
1. Soak all the dry fruits in orange juice for minimum 4 hrs or overnight. Results will be best if kept over night.
2. In a pan, add 1 cup sugar and let it caramelise on low flame,
After it is caramelised, turn off the gas and add 1/2 cup water.
Set is aside to cool down.
3. In a bowl, add milk, curd, oil and vanilla essence. Mix well.
4. Add Maida, sugar, ginger powder, cinnamon powder, cocoa powder and mix well.
5. Now add the soaked dry fruits only and mix well in the cake batter.
6. Add caramel and left over orange juice in parts to adjust the consistency. The cake batter should be thick.
7. Add baking powder, baking soda. Add vinegar and orange juice to activate the process of baking powder and soda,
8. Combine everything well together.
9. Add the cake batter to a greased cake tin.
10. Per heat the cooker for 10 mins on low flame,
11. Baking the cake for 35-40 mins on medium flame in the cooker.
12. Our eggless Christmas cake is ready to eat.
