1 cup apple cider apple juice or water
For the Glaze:
1 cup marmalade bitter or sweet
4 tablespoons unsalted butter
1 tablespoon hot honey or honey plus ¼ teaspoon crushed red pepper
3 tablespoons Big O liqueur bourbon or dark rum
½ cup dark brown sugar
1 tablespoon Dijon mustard
2 teaspoons ginger paste or 1 teaspoon freshly grated ginger
½ teaspoon ground cloves
¾ teaspoon kosher salt
¼ teaspoon ground black pepper
