In this video, we show you a Sekela Chicken Recipe, which is a popular street food snack in Dar es Salaam Tanzania. Sekela means 'grilled' in Gujarati, and this Sekela Chicken Recipe is absolutely delicious with its tandoori smokey BBQ flavour. This grilled Sekela Chicken Dar es Salaam style dish is also known as 'Kuku wa Sekela' in Swahili. Video Timings: Intro: 0:00 Sekela Chicken Recipe: 0:44 Plating and Presentation: 3:31 Ending Comments: 4:02 To make the Sekela Chicken Recipe, you will need: 1 TBS Tamarind soaked in Hot Water 1/2 cup yogurt 1/2 TSP Kashmiri Chili Powder salt to taste 1 tsp coriander powder (dhania) 1/2 tsp chili flakes 1/2 tsp black pepper 1 tsp garlic powder 1/2 tsp ginger powder 1 tsp tandoori powder 1/2 tsp mustard powder optional: pinch of red and orange food colour whole baby chicken, cut into half length-ways, with slits juice of 1 small lemon mustard oil tomatoes, onions and capsicum peppers for grilling Sekela Chicken is best cooked on the BBQ or grilled, but due to the weather, we partially cooked the chicken in the oven first and then finished off on the grill pan. We also added a small piece of coal to some oil, then covered it with the chicken in some foil for 2-3 minutes before serving. This gives the smokey BBQ flavour when you're not able to barbecue the chicken. Sekela Chicken is incredibly delicious and packed full of flavour. The BBQ style char-grilled flavour combined with the delicious spices takes you to the amazing Tanzanian capital of Dar es Salaam.
